A journey from vine to wine in pictures

Thank you to Jean-Luc SALASC, head of the winery “Les Trois Grappes” and Nicolas ALLEGRE, head of the production and marketing Union “ Les Vignerons de la Vicomté”  who enabled members of INRAE working on BigDataGrapes to visit:

  • The “Cave Coopérative Les Trois Grappes” to understand better the viticulture part, especially at harvest and the winemaking process
  • The “Vignerons de la Vicomté” for bottling and wine tasting.

Jean-Luc SALASC is one of INRAE end-users who evaluated the software tools developed within the project.

1. Everything starts in the field, early in the morning, the 28th of August in the vineyard.

2. Mechanical harvest of the grape variety Chardonnay.

3. Arrival of harvested wine grapes at the cooperative winery “Les Trois Grappes”.

4. Some steps of the winemaking process:

Thermovinification of some red wines which is a pre-fermentation process of heating whole or crushed grapes to promote, for example, the rapid extraction of color compounds (anthocyanins).

Alcoholic fermentation in big tanks: transformation of sugars into alcohol.

Pressing step with a pneumatic wine press: extraction of the juice.

Filtering with Perlite (siliceous volcanic rock), it makes a filtering layer (cake).

5. Creation of wines that fit customer needs: tasting room. Assemblage step which consists in blending of base wines in order to create the wine of interest (specific aromas and colors).

6. Bottling at “Vignerons de la Vicomté”: filling, corking, capping and labelling.

7. And the final step: wine tasting.
